Quick Diabetic-Friendly Cake (5 Minutes Prep)


Ingredients
1 egg
3 tbsp almond flour
1 tbsp Greek yogurt
1 tbsp melted butter or coconut oil
1–2 tsp sweetener (stevia, erythritol, or monk fruit)
1/2 tsp baking powder
1/2 tsp vanilla
Pinch of salt
Instructions
Mix all ingredients in a bowl or mug until smooth.
Microwave for 1½–2 minutes
OR bake at 180°C / 350°F for about 10 minutes.
Let cool slightly before eating.

Almond flour keeps it soft and lower in carbs.
Do not overcook or it may dry out.
