Ingredients:
2 large carrots, grated
2 eggs
1 cup oats
1 ripe banana
1/2 cup chopped nuts (walnuts or almonds)
1 tsp cinnamon
1 tsp baking powder

Pinch of salt
Instructions:
Preheat oven to 180Β°C / 350Β°F.
Blend the oats until they become flour-like.
In a blender, mix banana, eggs, and vanilla until smooth.
Add grated carrots, oat flour, cinnamon, baking powder, and salt. Mix well.
Fold in the chopped nuts.
Pour the batter into a greased baking pan.
Bake for 30–35 minutes or until a toothpick comes out clean.
