- Prep time: 5 minutes
- Cook time: 15–20 minutes
- Servings: 1
Ingredients
- Proteins: 3 pork sausages, 2–3 slices of back bacon, 1 large egg.
- Vegetables: 3–4 cherry tomatoes (on the vine if possible), 2 large chestnut mushrooms (sliced).
- Sides: 2 slices of white bread, 2–3 frozen hash browns.
- Pantry: Vegetable oil or butter, salt, and black pepper.
Instructions
1. The Sausages and Hash Browns
Heat a small amount of oil in a large frying pan over medium-low heat. Add the sausages first, as they take the longest (about 12–15 minutes). Turn them occasionally so they brown evenly. If you are using a toaster oven or air fryer for the hash browns, start them now according to package instructions.
2. The Mushrooms and Tomatoes
Add the mushrooms and cherry tomatoes to the same pan. Cook the mushrooms until soft and golden, and the tomatoes until the skins start to slightly blister and soften (about 5–8 minutes). Season with a pinch of salt and pepper.
3. The Bacon
Push the vegetables to the side and add the bacon slices. Fry for 2–3 minutes per side until the edges are crispy.
4. The Bread (Fried Bread)
In the image, the bread is golden and “fried.” You can toast your bread, but for the authentic version, clear a space in the pan (adding a little more oil or butter if needed) and fry the bread for 1–2 minutes per side until it absorbs the flavors and turns golden brown.
5. The Egg
Finally, crack the egg into the pan. For a “sunny-side up” look like the photo, do not flip it. Spoon a little of the hot oil over the egg white to help it set while keeping the yolk runny.
Assembly
Place the fried bread at the bottom of the plate and rest the egg on top. Arrange the sausages, crispy bacon, hash browns, tomatoes, and mushrooms around it. Serve immediately with a cup of tea or coffee.
Tip: To keep everything hot, place a large plate in a low oven (around 100°C) and add the ingredients to the plate as they finish cooking.
