Walking Taco Lasagna

A delicious fusion of Mexican flavors and Italian style layering, perfect for family dinners.

Ingredients

  • Meat Layer: 1 ½ lbs ground beef, 1 packet taco seasoning, ½ cup water.
  • The Mix: 1 (15 oz) can black beans (drained & rinsed), 1 (15 oz) can corn (drained), 1 cup salsa.
  • The Layers: 8-10 small flour tortillas (6-inch), 3-4 cups crushed Doritos, 3 cups Mexican blend cheese, 1 cup shredded cheddar cheese.
  • Toppings: ½ cup sour cream, ½ cup sliced jalapeños, ½ cup diced tomatoes, Fresh chopped cilantro.

Instructions

  1. Brown the Beef: In a large skillet over medium heat, cook the ground beef until fully browned. Drain the excess fat.
  2. Season: Stir in the taco seasoning and water. Let it simmer for about 5 minutes until the liquid reduces.
  3. Combine: Add the black beans, corn, and salsa to the beef mixture. Stir well and cook for another 2-3 minutes.
  4. Assemble the Lasagna:
    • ​Preheat your oven to 350°F (175°C).
    • ​Spread a thin layer of the meat mixture at the bottom of a 9×13 inch baking dish.
    • ​Place a layer of flour tortillas on top (you can cut them to fit).
    • ​Add a layer of meat mixture, followed by a generous sprinkle of Mexican cheese and crushed Doritos.
    • ​Repeat the layers until the ingredients are used up, finishing with a top layer of cheddar cheese and more crushed Doritos.
  5. Bake: Place in the oven and bake for 20-25 minutes until the cheese is bubbly and melted.
  6. Garnish and Serve: Top with diced tomatoes, jalapeños, and fresh cilantro. Serve warm with a dollop of sour cream on the side.
