Ingredients
- 2 large zucchinis, sliced into half-moons
- 2 cups mushrooms, sliced
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp dried thyme
- Salt and pepper to taste
- 1/4 cup Parmesan cheese (optional)
- Fresh parsley for garnish
Instructions
- Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
- Brown the Mushrooms: Add the mushrooms and cook for about 5 minutes. Let them release their moisture and start to turn golden brown.
- Cook Zucchini: Toss in the zucchini and season with thyme, salt, and pepper. Sauté for 7–10 minutes, stirring occasionally, until the zucchini is tender but not mushy.
- Finish: If using Parmesan, sprinkle it over the top and let it melt. Garnish with parsley and serve hot.
