Sautéed Zucchini & Mushrooms

A quick, low-carb side dish.

Ingredients

  • 2 large zucchinis, sliced into half-moons
  • 2 cups mushrooms, sliced
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 1/4 cup Parmesan cheese (optional)
  • Fresh parsley for garnish

Instructions

  1. Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
  2. Brown the Mushrooms: Add the mushrooms and cook for about 5 minutes. Let them release their moisture and start to turn golden brown.
  3. Cook Zucchini: Toss in the zucchini and season with thyme, salt, and pepper. Sauté for 7–10 minutes, stirring occasionally, until the zucchini is tender but not mushy.
  4. Finish: If using Parmesan, sprinkle it over the top and let it melt. Garnish with parsley and serve hot.
