Grilled Chicken Salad Recipe
Servings: 4-6
Prep Time: 15 minutes
Cook Time: 10-12 minutes
Total Time: 25-27 minutes
Ingredients:
- 1 pound boneless, skinless chicken breast
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 4-6 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, sliced
- 1/2 cup crumbled feta cheese (optional)
- 1/4 cup chopped fresh parsley
Instructions:
- Preheat grill to medium-high heat.
- In a small bowl, whisk together olive oil, garlic, and dried oregano.
- Brush the mixture on both sides of the chicken breast.
- Season with salt and pepper to taste.
- Grill the chicken for 5-6 minutes per side, or until cooked through.
- Let the chicken rest for a few minutes before slicing.
- In a large bowl, combine mixed greens, cherry tomatoes, cucumber, and crumbled feta cheese (if using).
- Slice the grilled chicken and add it to the bowl.
- Sprinkle chopped parsley on top and serve.
