Cheesy Garlic Cauliflower Gratin

  • 1 large head of Cauliflower (cut into large florets)
  • 1 cup Shredded Parmesan cheese (or grated cheese for the base layer)
  • 1 cup Fresh Mozzarella cheese (sliced or torn, as seen in the top image)
  • 1 cup Heavy cream (or sour cream/creme fraiche for a thicker texture)
  • 2 tbsp Butter (melted)
  • 3 cloves Garlic (minced)
  • 1 tsp Onion powder
  • 1/2 tsp Italian seasoning or dried thyme
  • Salt and fresh black pepper to taste
  • Fresh parsley (finely chopped, for garnish)

​Instructions

​1. Pre-cook the Cauliflower

  • ​Preheat your oven to 400°F (200°C).
  • ​Bring a large pot of salted water to a boil. Add the cauliflower florets and cook for about 5 to 7 minutes until they are slightly tender but still firm (al dente). Do not overcook them, or they will get mushy in the oven.
  • ​Drain the cauliflower thoroughly and pat it dry with a clean towel to prevent the sauce from getting watery.

​2. Prepare the Cream Sauce

  • ​In a bowl, whisk together the heavy cream, melted butter, minced garlic, onion powder, Italian seasoning, salt, and black pepper.

  • ​Pour the seasoned cream mixture evenly over the cauliflower.
  • ​Sprinkle the grated Parmesan cheese evenly across the top, then place the fresh mozzarella slices over the florets (matching the first image).

​4. Bake to Golden Perfection

  • ​Bake in the preheated oven for 20 to 25 minutes, or until the sauce is bubbling and the cheese on top turns a beautiful, spotted golden-brown color (matching the second image).
  • Tip: If you want it extra crispy on top, turn on the oven broiler for the last 2 to 3 minutes.
