Ingredients:
Cob loaf dip:
- 1 large cob loaf
- 250 g cream cheese, softened
- 1 cup sour cream
- 1 cup grated tasty cheese
- 200 g shortcut bacon, diced
- 1 small brown onion, finely chopped
- 1 tsp garlic powder
- 1/2 tsp black pepper
Directions:
1️⃣ Prepare the cob loaf:
- Preheat oven to 170°C fan forced.
- Slice the top off the cob loaf.
- Scoop out the soft bread from the centre, leaving a thick shell.
- Tear the removed bread into bite-sized dipping pieces.
2️⃣ Cook the bacon mixture:
- Heat a frying pan over medium heat.
- Cook diced bacon until lightly crispy.
- Add chopped onion and cook until softened.
3️⃣ Make the dip filling:
- In a bowl combine cream cheese, sour cream, grated cheese, garlic powder, and pepper.
- Stir in the cooked bacon and onion mixture.
4️⃣ Fill and bake:
- Spoon mixture into the hollowed cob loaf.
- Place cob loaf and bread pieces onto a baking tray.
- Bake for 20 to 25 minutes until hot and bubbly.
5️⃣ Serve:
- Remove from oven and place on a serving platter.
To serve:
Serve warm with toasted bread pieces for dipping. Perfect for parties, game nights, or BBQ gatherings
