Grilled Chicken Salad Recipe
Servings: 4-6
Prep Time: 15 minutes
Cook Time: 10-12 minutes
Total Time: 25-27 minutes
Ingredients:

  • 1 pound boneless, skinless chicken breast
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 4-6 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, sliced
  • 1/2 cup crumbled feta cheese (optional)
  • 1/4 cup chopped fresh parsley
    Instructions:
  1. Preheat grill to medium-high heat.
  2. In a small bowl, whisk together olive oil, garlic, and dried oregano.
  3. Brush the mixture on both sides of the chicken breast.
  4. Season with salt and pepper to taste.
  5. Grill the chicken for 5-6 minutes per side, or until cooked through.
  6. Let the chicken rest for a few minutes before slicing.
  7. In a large bowl, combine mixed greens, cherry tomatoes, cucumber, and crumbled feta cheese (if using).
  8. Slice the grilled chicken and add it to the bowl.
  9. Sprinkle chopped parsley on top and serve.
