Diabetic-Friendly Stuffed Pepper Casserole
Ingredients
500 g lean ground beef or turkey
3 large bell peppers, chopped
1 small onion, diced
3 cloves garlic, minced
1 can diced tomatoes (no added sugar)
1 cup cauliflower rice or cooked brown rice
1 cup shredded mozzarella cheese
1 tbsp olive oil
1 tsp paprika
1 tsp Italian seasoning
Salt and black pepper to taste
Fresh parsley for garnish
Instructions
Preheat oven to 190°C (375°F).
Heat olive oil in a large skillet over medium heat.
Cook onion and garlic for 2–3 minutes until fragrant.
Add ground beef or turkey and cook until browned.
Stir in chopped peppers, tomatoes, cauliflower rice, paprika, Italian seasoning, salt, and pepper.
Simmer for about 8–10 minutes until peppers soften slightly.
Transfer mixture into a casserole dish.
Top with mozzarella cheese.
Bake for 15–20 minutes until cheese is melted and bubbly.
Garnish with parsley and serve warm.
