This is something I eat almost every morning. It’s filling, packed with protein, and really tasty. This is my version of avocado toast!
Ingredients:
2 slices of Dempster’s Protein Bread (for extra protein)
2–3 scrambled eggs
1/2 avocado
2 tbsp feta cheese, crumbled
1 Roma tomato, sliced or diced
Salt and black pepper, to taste
Optional: chili flakes or everything bagel seasoning
Directions:
Toast the protein bread until golden and crispy.
Crack 2–3 eggs into a bowl, season with salt and pepper, and whisk well.
Cook the eggs in a pan over medium heat, stirring gently until soft and fluffy.
Mash the avocado with a fork or slice it thinly. Spread it over the toasted bread.
Add the scrambled eggs on top.
Sprinkle with feta cheese and add sliced Roma tomatoes.
Finish with black pepper and optional chili flakes for extra flavor.
