Fluffy Sponge Cupcakes Recipe (Makes 8–10 cupcakes)

Ingredients:

4 eggs, separated

60g (1/4 cup) milk

50g (1/4 cup) vegetable oil

80g (2/3 cup) cake flour (or all-purpose flour sifted)

70g (1/3 cup) sugar

1 tsp vanilla extract

1 tsp lemon juice (optional)

Pinch of salt

Instructions:

  1. Preheat oven to 150°C (300°F). Line a muffin tray with cupcake liners.
  2. In a bowl, whisk milk and oil together. Add flour and mix until smooth.
  3. Add egg yolks and vanilla. Mix well.
  4. In another bowl, beat egg whites with lemon juice and salt. Gradually add sugar and beat until soft peaks form.
  5. Fold the egg whites gently into the batter in 3 additions. Do not overmix.
  6. Pour batter into cupcake liners about 80% full.
  7. Place the muffin tray in a larger tray with hot water (water bath method) for extra softness.
  8. Bake for 25–35 minutes until lightly golden on top.
  9. Cool slightly and enjoy the soft, fluffy texture ☁️🧁
