Ingredients
For the Pork:
- 1 lb (approx. 500g) Pork tenderloin.
- 2 tbsp Olive oil.
- 1 tsp Smoked paprika.
- Salt and black pepper to taste.
- 2 cloves Garlic, minced.
- 1 tbsp Fresh rosemary or thyme, finely chopped.
For the Caramelized Apples & Glaze:
- 2 Large apples (Granny Smith or Honeycrisp), sliced into wedges.
- 2 tbsp Butter.
- 2 tbsp Brown sugar or honey.
- 1/4 cup Apple cider or chicken broth.
- 1 tbsp Apple cider vinegar.
- Optional garnish: Fresh chives or parsley, finely chopped.
Instructions
- Prep the Pork: Preheat your oven to 400°F (200°C). Season the pork tenderloin generously with salt, pepper, paprika, garlic, and fresh herbs.
- Sear the Meat: In an oven-proof skillet, heat olive oil over medium-high heat. Sear the pork on all sides until golden brown (about 2–3 minutes per side). Remove the pork and set it aside temporarily.
- Cook the Apples: In the same skillet, melt the butter. Add the apple slices and sauté for 3–5 minutes until they start to soften and turn golden.
- Make the Glaze: Stir in the brown sugar (or honey), apple cider vinegar, and apple cider/broth. Let it simmer for a minute, scraping up the flavorful bits from the bottom of the pan.
- Roast: Place the pork back into the skillet, nestled among the apples. Transfer the skillet to the oven. Roast for 12–15 minutes, or until the internal temperature of the pork reaches 145°F (63°C).
- Rest and Serve: Remove from the oven and let the meat rest for 5–10 minutes before slicing. This keeps it juicy. Slice into medallions and spoon the warm apples and glaze over the top. Garnish with fresh herbs.
