Bacon Cheesy Cob Loaf 🥓🧀


Ingredients:
Cob loaf dip:

  • 1 large cob loaf
  • 250 g cream cheese, softened
  • 1 cup sour cream
  • 1 cup grated tasty cheese
  • 200 g shortcut bacon, diced
  • 1 small brown onion, finely chopped
  • 1 tsp garlic powder
  • 1/2 tsp black pepper

Directions:
1️⃣ Prepare the cob loaf:

  1. Preheat oven to 170°C fan forced.
  2. Slice the top off the cob loaf.
  3. Scoop out the soft bread from the centre, leaving a thick shell.
  4. Tear the removed bread into bite-sized dipping pieces.

2️⃣ Cook the bacon mixture:

  1. Heat a frying pan over medium heat.
  2. Cook diced bacon until lightly crispy.
  3. Add chopped onion and cook until softened.

3️⃣ Make the dip filling:

  1. In a bowl combine cream cheese, sour cream, grated cheese, garlic powder, and pepper.
  2. Stir in the cooked bacon and onion mixture.

4️⃣ Fill and bake:

  1. Spoon mixture into the hollowed cob loaf.
  2. Place cob loaf and bread pieces onto a baking tray.
  3. Bake for 20 to 25 minutes until hot and bubbly.

5️⃣ Serve:

  1. Remove from oven and place on a serving platter.

To serve:
Serve warm with toasted bread pieces for dipping. Perfect for parties, game nights, or BBQ gatherings
