β2 tbsp Finely shredded carrots.
β1 large Egg (or 3 tbsp liquid egg whites for lower fat).
β1 tbsp Unsweetened applesauce (or Greek yogurt) to keep it moist.
β1-2 tbsp Almond milk (add gradually until itβs a cake batter consistency).
βOptional: A few drops of vanilla extract and a pinch of salt.
βInstructions
βMix: In a microwave-safe mug, whisk the dry ingredients together first to remove any protein powder clumps.
βCombine: Add the wet ingredients (egg, applesauce, milk, and carrots) and stir until smooth.
βMicrowave: Cook on high for 60 to 90 seconds. βNote: Don’t overcook it! Protein powder can get rubbery if left in too long. Stop when the center is just set.
