Ingredients
- 1 pack Flour Tortillas
- 1 lb (approx. 450g) Ground Beef (cooked and seasoned)
- 1 packet Taco Seasoning Mix
- 1 can Black Beans (drained and rinsed)
- 2-3 cups Colby Jack Shredded Cheese (or Mexican blend)
- 1 cup Sour Cream
- 1 cup Diced Tomatoes
- 1/2 cup Sliced Green Onions (Scallions)
Instructions
Step 1: Prep the Meat & Beans
- Brown the ground beef in a skillet over medium-high heat until fully cooked. Drain any excess fat.
- Add the taco seasoning mix and water according to the packet instructions, letting it simmer until thickened.
- Stir in the drained black beans with the seasoned meat (or keep them separate to layer, as preferred).
Step 2: Assemble the Lasagna
- Lightly grease a baking dish.
- First Layer: Place a layer of flour tortillas at the bottom of the dish to create a base.
- Second Layer: Spread a generous layer of the seasoned ground beef and black bean mixture over the tortillas.
- Third Layer: Sprinkle a handful of shredded Colby Jack cheese over the meat.
- Repeat: Repeat the layers (tortillas, meat/beans, cheese) until your baking dish is filled near the top. Ensure the final top layer is heavily covered with cheese.
Step 3: Bake
- Preheat your oven to 375°F (190°C).
- Bake the casserole for about 20–25 minutes, or until the cheese on top is completely melted, bubbly, and golden brown around the edges.
Step 4: Garnish & Serve
- Let it cool for 5–10 minutes after removing it from the oven so it holds its shape when sliced.
- Cut into squares, lift a piece out, and top it with a dollop of sour cream, diced tomatoes, and chopped green onions before serving.
