Homemade Turkish Cheese Pide

A soft, golden bread with a heart of melted cheese.

Ingredients You’ll Need:

For the Dough:

  • 500g All-purpose flour (The base)
  • 300ml Warm milk (For softness)
  • 10g Dry yeast (To make it rise)
  • 18g Sugar & 10g Salt (For balance)
  • 40ml Vegetable oil (For a smooth texture)

For the Filling & Topping:

  • 250-300g Grated Cheese (Kashar or Mozzarella)
  • 1 Egg yolk mixed with 1 tbsp of oil (For the golden shine)
  • Sesame seeds (The final touch)

Simple Steps to Follow:

  1. Prepare the Yeast: Mix the warm milk, sugar, and yeast in a small bowl. Let it sit for 5-10 minutes until it becomes bubbly and active.
  2. Make the Dough: In a large bowl, combine the flour and salt. Add the yeast mixture and the oil. Knead everything together for about 10 minutes until you have a smooth, soft dough.
  3. Rest Time: Cover your dough and let it rest in a warm place for 1 hour. It should double in size and become very airy.
  4. Fill it Up: Divide the dough into two balls. Flatten one into a circle, place a generous amount of cheese in the middle, then fold the edges over to seal the cheese inside. Flip it over and press it down gently into a flat disc.
  5. Design & Shine: Use a knife to lightly mark a “diamond” pattern on top. Brush it with the egg yolk and oil mixture, then sprinkle the sesame seeds on top.
  6. Bake: Place it in a preheated oven at 200°C for 15-20 minutes until it turns a beautiful golden-brown color.
