Ingredients

  • 1 cup Cottage Cheese: (Full fat is best, and it must be well-drained).
  • 1 cup Shredded Mozzarella: (Or a blend of Mozzarella and Cheddar for more flavor).
  • Optional: Garlic powder, dried oregano, or red pepper flakes for an extra kick.

  1. Drain the Moisture: This is the most important step. Place the cottage cheese in a fine-mesh strainer or squeeze it through a cheesecloth to remove as much liquid as possible. If it’s too wet, the sticks won’t hold their shape.
  2. Mix & Season: In a bowl, combine the dry cottage cheese and the shredded mozzarella. Add any seasonings you like.
  3. Freeze to Set: Line a small baking dish with parchment paper. Spread the mixture evenly (about 1–2 cm thick). Place it in the freezer for at least 60 minutes until it’s firm enough to slice.
  4. Slice: Take the frozen block out and cut it into even rectangular sticks.
  5. Cook until Crispy:
    • Air Fryer: Place the sticks in the basket (don’t crowd them). Spray lightly with oil and cook at 400°F (200°C) for 10–12 minutes until golden brown and bubbling.
    • Pan-Sear: Use a non-stick pan over medium-high heat with a little oil spray. Sear for 2–3 minutes per side until a “cheese crust” forms.

The Texture: Don’t be alarmed if they look soft while hot. Let them sit for 2–3 minutes after cooking; they will firm up and become much crispier as they slightly cool!
