Creamy Corn & Green Chili Casserole

This comfort dish combines sweet corn with a creamy, cheesy base and a mild kick from green chilies. It’s the perfect side dish for BBQ or taco night.

Ingredients

  • 3 cups whole kernel corn (fresh, frozen, or canned/drained)
  • 4 oz diced green chilies (mild or hot, depending on your preference)
  • 1/2 cup sour cream or Greek yogurt
  • 4 oz cream cheese (softened)
  • 1 1/2 cups shredded cheddar or Monterey Jack cheese
  • 1/4 cup unsalted butter (melted)
  • 1/2 tsp garlic powder
  • 1/4 tsp smoked paprika
  • Salt and black pepper to taste

Instructions

  1. Prep: Preheat your oven to 350°F (175°C) and lightly grease a baking dish or cast-iron skillet.
  2. Mix the Base: In a large bowl, stir together the softened cream cheese, sour cream, melted butter, garlic powder, and paprika until smooth.
  3. Add Corn & Chilies: Fold in the corn, diced green chilies, and half of the shredded cheese. Season with salt and pepper.
  4. Transfer: Spread the mixture evenly into your prepared dish.
  5. Topping: Sprinkle the remaining shredded cheese over the top.
  6. Bake: Bake for 25–30 minutes, or until the cheese is bubbly and starting to turn golden brown around the edges.
  7. Serve: Let it sit for 5 minutes before serving warm.
