Ingredients
For the Chicken & Seasoning:
- 2 Chicken breasts
- 1/2 tsp Paprika
- 1/2 tsp Chili powder
- 1/2 tsp Cumin
- 1 1/2 tsp Oregano
- 1 tsp Garlic powder
- 1 tsp Onion powder
- 1 tsp Salt
- 1/2 tsp Black pepper
- Olive oil (for coating)
For the Filling & Assembly:
- 4 oz Cream cheese
- 3/4 cup Cheese blend (shredded)
- Flour tortillas
Instructions
1. Prepare the Seasoning:
In a small bowl, combine the paprika, chili powder, cumin, oregano, garlic powder, onion powder, salt, and pepper. Whisk together until well mixed.
2. Season and Bake the Chicken:
- Place the chicken breasts on a baking sheet lined with parchment paper.
- Drizzle with olive oil and coat generously with the spice blend on both sides.
- Bake at 400°F (200°C) for 30 minutes, flipping the chicken halfway through.
3. Shred and Mix:
- Once cooked, shred the chicken using two forks.
- In a large bowl, mix the shredded chicken with cream cheese, the cheese blend, and the remaining spice mixture until well combined.
4. Assemble the Taquitos:
- Place a portion of the chicken mixture onto each flour tortilla and roll them up tightly.
- Arrange the rolled tortillas on a baking sheet.
5. Final Bake:
- Bake at 400°F (200°C) for another 15 minutes until the tortillas are golden and crispy.
