Ingredients
2 eggs
1/2 cup almond flour
2 tbsp cream cheese
1 tsp baking powder
1 tsp vanilla extract
1 tbsp sweetener (erythritol or stevia)
Pinch of salt
Butter or coconut oil for cooking
Instructions
Add all ingredients to a blender or bowl.
Mix until smooth and fluffy.
Heat a non-stick pan over medium heat.
Lightly grease with butter or coconut oil.
Pour small amounts of batter into the pan.
Cook 2β3 minutes until bubbles form.
Flip and cook another 1β2 minutes.
Serve warm with berries or sugar-free syrup.

For extra fluffiness, let the batter rest for 2 minutes.
