Ingredients
Peanut Layer
2 cups salted peanuts
Caramel Filling
1/2 cup sugar-free peanut butter
1/3 cup butter
1/3 cup heavy cream
1/4 cup powdered erythritol or monk fruit sweetener
1 tsp vanilla extract
Pinch of salt
Instructions
Line a small loaf pan or container with parchment paper.
Spread half of the peanuts on the bottom.
In a saucepan over low heat, melt butter and peanut butter together.
Stir in heavy cream, sweetener, vanilla, and salt.
Simmer 2β3 minutes until thick and smooth.
Pour caramel mixture over the peanuts.
Top with remaining peanuts and gently press down.
Refrigerate for 1β2 hours until firm.
Slice into bars and enjoy!
