  • Dry Rub: 2 tbsp brown sugar, 1 tbsp paprika, 1 tsp garlic powder, 1 tsp onion powder, salt, and black pepper.

  1. ​Remove the thin membrane from the back of the ribs. Pat dry and coat generously with the dry rub.
  2. ​Wrap the ribs tightly in aluminum foil and bake at 150°C (300°F) for 2.5 to 3 hours until tender.
  3. ​Remove from foil, brush generously with BBQ sauce, and grill or broil for 4–5 minutes per side until the sauce caramelizes and bubbles.

​Ingredients:

  • ​3 large Russet potatoes, vegetable oil for frying, salt to taste.

​Instructions:

  1. ​Peel and cut potatoes into even sticks. Soak them in cold water for 30 minutes to remove excess starch, then dry them completely with a towel.

  • ​1 thick-cut steak (Ribeye or New York Strip), 2 tbsp butter, 2 cloves garlic (smashed), fresh rosemary or thyme, 1 tbsp vegetable oil, salt, and coarse black pepper.

  1. ​Bring the steak to room temperature and pat it completely dry. Season generously with salt and pepper on all sides.
  2. ​Heat oil in a heavy cast-iron skillet over high heat until smoking.
