Blueberry Oatmeal Bars

​Ingredients

  • 1 cup fresh or frozen blueberries
  • 1 1/2 cups rolled oats (old-fashioned oats)
  • 2 large eggs
  • 1/3 cup honey (or maple syrup)
  • 1/2 cup milk (any preference)
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • Optional: 1 tsp baking powder (for a slightly softer, fluffier texture)
  • Optional: A pinch of salt

​Instructions

​1. Prep the Oven and Pan

  • ​Preheat your oven to 350°F (175°C).
  • ​Line an 8×8 inch baking pan with parchment paper or lightly grease it with cooking spray.

​2. Mix the Wet Ingredients

  • ​In a medium bowl, whisk the eggs, honey, milk, and vanilla extract together until well combined and smooth.

​3. Add the Dry Ingredients

  • ​Stir in the rolled oats, ground cinnamon (and baking powder/salt if using). Mix until the oats are fully coated by the liquid.

​4. Fold in the Blueberries

  • ​Gently fold in the blueberries so they are evenly distributed throughout the mixture.

​5. Bake

  • ​Pour the mixture into your prepared baking pan and smooth the top with a spatula.
  • ​Bake for 25 to 30 minutes, or until the top is golden brown and the center is set (doesn’t jiggle).

​6. Cool and Serve

  • ​Remove from the oven and let it cool completely in the pan before slicing into squares. This helps the bars hold their shape perfectly.
