Ingredients
- 1 cup fresh or frozen blueberries
- 1 1/2 cups rolled oats (old-fashioned oats)
- 2 large eggs
- 1/3 cup honey (or maple syrup)
- 1/2 cup milk (any preference)
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon
- Optional: 1 tsp baking powder (for a slightly softer, fluffier texture)
- Optional: A pinch of salt
Instructions
1. Prep the Oven and Pan
- Preheat your oven to 350°F (175°C).
- Line an 8×8 inch baking pan with parchment paper or lightly grease it with cooking spray.
2. Mix the Wet Ingredients
- In a medium bowl, whisk the eggs, honey, milk, and vanilla extract together until well combined and smooth.
3. Add the Dry Ingredients
- Stir in the rolled oats, ground cinnamon (and baking powder/salt if using). Mix until the oats are fully coated by the liquid.
4. Fold in the Blueberries
- Gently fold in the blueberries so they are evenly distributed throughout the mixture.
5. Bake
- Pour the mixture into your prepared baking pan and smooth the top with a spatula.
- Bake for 25 to 30 minutes, or until the top is golden brown and the center is set (doesn’t jiggle).
6. Cool and Serve
- Remove from the oven and let it cool completely in the pan before slicing into squares. This helps the bars hold their shape perfectly.
