Ingredients:
- 4 medium beets
- 1 cup vinegar
- 1/2 cup water
- 1/3 cup sugar
- 1 tsp salt
- 1/2 tsp black peppercorns
- 1 garlic clove (optional)
Instructions:
- Wash the beets and boil them for 35–45 minutes until tender.
- Let them cool, peel the skin off, and slice into rounds or cubes.
- In a saucepan, combine vinegar, water, sugar, salt, and peppercorns. Bring to a boil.
- Place the beets into a clean jar and add garlic if desired.
- Pour the hot pickling liquid over the beets until fully covered.
- Seal the jar and let it cool.
- Refrigerate for at least 24 hours before eating for the best flavor.
