This comforting casserole is a perfect “set and forget” meal. It combines savory ham, tender potatoes, and a blend of melted cheeses, topped with fresh green onions for a pop of color and flavor.
Ingredients
The Base:
- 2 lbs Diced potatoes (hash browns or par-boiled gold potatoes)
- 2 cups Cooked ham, cubed
- 1/2 cup Green onions, sliced (reserve some for garnish)
- 1/2 cup Bell peppers, diced (optional)
The Custard & Cheese:
- 8 large Eggs
- 1 cup Whole milk or heavy cream
- 1 tsp Garlic powder
- 1/2 tsp Onion powder
- 2 cups Shredded cheese (a mix of Cheddar and Mozzarella works best)
- Salt and black pepper to taste
Instructions
- Prep: Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish with butter or non-stick spray.
- Layer: Spread the diced potatoes evenly across the bottom of the dish. Top with the cubed ham and most of the green onions.
- Whisk: In a large bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper until well combined.
- Assemble: Pour the egg mixture over the potatoes and ham. Ensure everything is evenly submerged. Sprinkle the shredded cheese generously over the top.
- Bake: Place in the oven and bake for 35–45 minutes. The center should be set (not jiggly) and the cheese should be golden brown and bubbly.
- Serve: Let the casserole rest for 5–10 minutes before slicing. Garnish with the remaining fresh green onions.
Variations for Discovery
- Spice it up: Add a pinch of red chili flakes or diced jalapeños into the egg mixture for a spicy kick.
- Veggie Boost: Stir in a handful of fresh spinach or sautéed mushrooms to add more nutrients and a Mediterranean flair.
- Protein Swap: This also works beautifully with smoked turkey or cooked breakfast sausage if you want to switch things up.
