Baked Chicken Taquitos Recipe

Ingredients

For the Chicken & Seasoning:

  • 2 Chicken breasts
  • 1/2 tsp Paprika
  • 1/2 tsp Chili powder
  • 1/2 tsp Cumin
  • 1 1/2 tsp Oregano
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • Olive oil (for coating)

For the Filling & Assembly:

  • 4 oz Cream cheese
  • 3/4 cup Cheese blend (shredded)
  • Flour tortillas

Instructions

1. Prepare the Seasoning:

In a small bowl, combine the paprika, chili powder, cumin, oregano, garlic powder, onion powder, salt, and pepper. Whisk together until well mixed.

2. Season and Bake the Chicken:

  • ​Place the chicken breasts on a baking sheet lined with parchment paper.
  • ​Drizzle with olive oil and coat generously with the spice blend on both sides.
  • ​Bake at 400°F (200°C) for 30 minutes, flipping the chicken halfway through.

3. Shred and Mix:

  • ​Once cooked, shred the chicken using two forks.
  • ​In a large bowl, mix the shredded chicken with cream cheese, the cheese blend, and the remaining spice mixture until well combined.

4. Assemble the Taquitos:

  • ​Place a portion of the chicken mixture onto each flour tortilla and roll them up tightly.
  • ​Arrange the rolled tortillas on a baking sheet.

5. Final Bake:

  • ​Bake at 400°F (200°C) for another 15 minutes until the tortillas are golden and crispy.
