Slow Cooker Chicken Stew

Warm, hearty, and full of tender chicken and vegetables, this Slow Cooker Chicken Stew is perfect for cozy nights. It’s easy to make, comforting, and packed with flavor—just set it and let it do the work!

Ingredients:

1.5 lb boneless, skinless chicken thighs or breasts, 3 carrots sliced, 3 celery stalks sliced, 2 potatoes diced, 1 small onion chopped, 3 cloves garlic minced, 4 cups chicken broth, 1 teaspoon salt, ½ teaspoon black pepper, 1 teaspoon dried thyme, 1 teaspoon dried parsley, 1 bay leaf, 2 tablespoons all-purpose flour (optional, for thickening), 2 tablespoons olive oil.

Instructions:

Heat olive oil in a skillet over medium heat and brown the chicken lightly on both sides (optional step for extra flavor). Transfer the chicken to the slow cooker.

Add carrots, celery, potatoes, onion, garlic, chicken broth, salt, black pepper, thyme, parsley, and bay leaf. Stir to combine everything.

Cover and cook on low for 6–7 hours or on high for 3–4 hours, until the chicken and vegetables are tender. Remove the chicken, shred it, and return it to the stew.

If you prefer a thicker stew, mix the flour with a small amount of water to make a slurry and stir it into the slow cooker. Cook for an additional 15–20 minutes until thickened. Serve hot with crusty bread for a comforting meal
