- β1/2 cup (60g) oat flour
- β1/4 cup (25g) protein powder (vanilla or unflavored)
- β1/2 cup (125g) smooth nut butter (e.g., almond or peanut)
- β1/2 cup (120ml) maple syrup or honey
- β1/2 cup (60g) finely grated fresh carrots
- β1 tsp vanilla extract
- β1 tsp ground cinnamon
- β1/2 tsp ground nutmeg
- β1/2 tsp baking soda
- β1/4 tsp salt
- βMix-ins (optional): 1/2 cup chopped walnuts, chocolate chips, or raisins
βInstructions
- βPrep: Preheat your oven to 350Β°F (175Β°C) and line a baking sheet with parchment paper.
- βMix Dry Ingredients: In a large bowl, whisk together the rolled oats, oat flour, protein powder, cinnamon, nutmeg, baking soda, and salt.
- βMix Wet Ingredients: In a separate bowl, stir together the nut butter, maple syrup (or honey), vanilla extract, and grated carrots until well combined.
- βCombine: Add the wet mixture to the dry ingredients and stir until a sticky dough forms. Gently fold in your chosen mix-ins (walnuts or chocolate chips).
