Classic Southern Banana Pudding

This “no-bake” style is a crowd favorite, famous for its layers of creamy custard, fresh fruit, and cookies that soften into a cake-like texture.

I. KEY INGREDIENTS

The Custard Base:

  • 2 cups Whole milk
  • ½ cup Granulated sugar
  • 3 tbsp Cornstarch (for thickening)
  • 3 Large Egg yolks
  • 1 tsp Pure vanilla extract
  • Pinch of salt

The Layers:

  • 1 box (11 oz) Vanilla Wafer cookies (like Nilla Wafers)
  • 4-5 Ripe Bananas, sliced into rounds

The Topping:

  • 1 cup Heavy whipping cream (chilled)
  • 2 tbsp Powdered sugar
  • Extra wafers (crushed for the garnish)

II. INSTRUCTIONS

1. Make the Homemade Custard

In a medium saucepan, whisk together the milk, sugar, cornstarch, and salt. Heat over medium-low heat, stirring constantly. In a small bowl, lightly beat the egg yolks. Slowly whisk about ½ cup of the warm milk into the yolks to “temper” them, then pour the yolk mixture back into the saucepan. Continue cooking and stirring until the mixture thickens into a smooth pudding. Remove from heat and stir in the vanilla. Let it cool slightly.

2. Build the Layers

In a deep glass dish or trifle bowl, create your first layer:

  • Bottom: Spread a layer of vanilla wafers.
  • Middle: Add a dense layer of sliced bananas over the cookies.
  • Top: Pour half of the warm custard over the bananas, smoothing it out with a spatula.
  • Repeat: Add another layer of wafers, bananas, and the remaining custard.

3. Prepare the Whipped Topping

In a cold bowl, beat the heavy cream and powdered sugar until stiff peaks form. Spread the whipped cream evenly over the final layer of custard.

4. The “Viral” Garnish (As seen in your photo)

Take a handful of vanilla wafers and crush them roughly by hand. Sprinkle the crumbs and broken pieces generously over the top. This adds a beautiful rustic texture.

5. The “Secret” Step: Chill!

Refrigerate the pudding for at least 4 to 6 hours (overnight is best). This allows the wafers to absorb moisture from the custard, turning them into soft, cake-like pillows.

Special Note: This is a classic comfort dessert—best served cold. For a shortcut, you can substitute the homemade custard with two boxes of “Instant Vanilla Pudding” mixed with 3 cups of milk and a 14 oz can of sweetened condensed milk.
