Fajita Chicken Casserole


Ingredients:

4 boneless, skinless chicken breasts, cut into bite-sized pieces
1 packet (1 oz) fajita seasoning mix
1 tablespoon olive oil
1 red bell pepper, thinly sliced
1 green bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
1 medium onion, thinly sliced

Preparation Method
​1. Preheat and Prep
​Preheat your oven to 200°C (400°F).
​Lightly grease a large baking dish (casserole dish) with olive oil or cooking spray to prevent sticking.
​2. Season the Chicken
​In a large mixing bowl, combine the bite-sized chicken breast pieces with 1 tablespoon of olive oil and the fajita seasoning packet.
​Toss thoroughly until every piece of chicken is evenly coated with the spices.
​3. Mix with Vegetables
​Add the thinly sliced red, green, and yellow bell peppers along with the sliced onion to the seasoned chicken.
​Mix well so the vegetables also pick up the flavors of the seasoning.
​4. Bake to Perfection
​Spread the mixture evenly into the prepared casserole dish.
​Bake for 25–30 minutes, or until the chicken is fully cooked through and the vegetables are tender with slightly charred edges.
​Pro Tip (Optional):
​For an extra touch of flavor, sprinkle 1 cup of shredded Mexican blend or Mozzarella cheese over the top during the last 5 minutes of baking until melted and bubbly.
