Ingredients:
4 boneless, skinless chicken breasts, cut into bite-sized pieces
1 packet (1 oz) fajita seasoning mix
1 tablespoon olive oil
1 red bell pepper, thinly sliced
1 green bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
1 medium onion, thinly sliced
Preparation Method
1. Preheat and Prep
Preheat your oven to 200°C (400°F).
Lightly grease a large baking dish (casserole dish) with olive oil or cooking spray to prevent sticking.
2. Season the Chicken
In a large mixing bowl, combine the bite-sized chicken breast pieces with 1 tablespoon of olive oil and the fajita seasoning packet.
Toss thoroughly until every piece of chicken is evenly coated with the spices.
3. Mix with Vegetables
Add the thinly sliced red, green, and yellow bell peppers along with the sliced onion to the seasoned chicken.
Mix well so the vegetables also pick up the flavors of the seasoning.
4. Bake to Perfection
Spread the mixture evenly into the prepared casserole dish.
Bake for 25–30 minutes, or until the chicken is fully cooked through and the vegetables are tender with slightly charred edges.
Pro Tip (Optional):
For an extra touch of flavor, sprinkle 1 cup of shredded Mexican blend or Mozzarella cheese over the top during the last 5 minutes of baking until melted and bubbly.
