Ingredients
- 1 cup Cottage Cheese: (Full fat is best, and it must be well-drained).
- 1 cup Shredded Mozzarella: (Or a blend of Mozzarella and Cheddar for more flavor).
- Optional: Garlic powder, dried oregano, or red pepper flakes for an extra kick.
Instructions
- Drain the Moisture: This is the most important step. Place the cottage cheese in a fine-mesh strainer or squeeze it through a cheesecloth to remove as much liquid as possible. If it’s too wet, the sticks won’t hold their shape.
- Mix & Season: In a bowl, combine the dry cottage cheese and the shredded mozzarella. Add any seasonings you like.
- Freeze to Set: Line a small baking dish with parchment paper. Spread the mixture evenly (about 1–2 cm thick). Place it in the freezer for at least 60 minutes until it’s firm enough to slice.
- Slice: Take the frozen block out and cut it into even rectangular sticks.
- Cook until Crispy:
- Air Fryer: Place the sticks in the basket (don’t crowd them). Spray lightly with oil and cook at 400°F (200°C) for 10–12 minutes until golden brown and bubbling.
- Pan-Sear: Use a non-stick pan over medium-high heat with a little oil spray. Sear for 2–3 minutes per side until a “cheese crust” forms.
Pro-Tips
The Texture: Don’t be alarmed if they look soft while hot. Let them sit for 2–3 minutes after cooking; they will firm up and become much crispier as they slightly cool!
