Ingredients
- 4 medium cucumbers, thinly sliced
- 1 small onion, thinly sliced
- 1 cup white vinegar
- 1 cup sugar
- 1/2 cup water
- 1 teaspoon salt
- 1 teaspoon celery seed (optional)
Instructions
- Prep the Veggies: Place the thinly sliced cucumbers and onions in a large bowl or divide them into two quart-sized jars.
- Make the Brine: In a separate bowl, whisk together the white vinegar, sugar, water, salt, and celery seed until the sugar is completely dissolved.
- Combine: Pour the liquid mixture over the cucumbers and onions.
- Chill: Cover and refrigerate. While it can be eaten early, the flavor is “better as it sits”.
- Storage: This salad can stay fresh in the refrigerator for up to two months.
