Sub in a Tub (Italian Chopped Salad Style)
All the sandwich flavor, no bread needed!
Ingredients (1 hearty serving)
Base
Shredded lettuce or chopped romaine (about 2 cups)
Proteins
3–4 oz grilled chicken breast, cubed
2–3 slices deli ham or turkey, rolled or chopped
1 hard-boiled egg, sliced
Veggies
Sliced cucumbers
Cherry tomatoes or diced tomatoes
Red onion, thinly sliced
Banana peppers or pepperoncini
Dill pickles, sliced
Extras
¼ cup shredded cheese (cheddar, mozzarella, or Italian blend)
¼ avocado, sliced (optional but )
Dressing
1–2 tbsp olive oil
1 tbsp red wine vinegar
½ tsp dried oregano
Salt & pepper to taste
How to Assemble
Add lettuce to the bottom of your container or bowl.
Arrange chicken, deli meat, egg, veggies, cheese, and avocado on top.
Drizzle with olive oil and red wine vinegar.
Sprinkle oregano, salt, and pepper.
Toss before eating or keep layered for meal prep.
Tips
Swap meats for salami, pepperoni, tuna, or rotisserie chicken.
Keep dressing separate if prepping ahead.
Want it creamy? Add a spoon of light mayo or Greek yogurt.
