Fresh Cucumber & Tomato SaladI
ngredients:
2 cucumbers,
peeled and sliced
1 red onion,
sliced into rings
Β½ pint cherry tomatoes, halved
β cup white vinegar
ΒΌ cup olive oil or avocado oil
β cup water
1 tbsp granulated erythritol or a pinch of stevia (optional, to replace sugar)
Salt and pepper to taste
Directions:
Prep veggies:
Slice cucumbers,
onions, and halve tomatoes.
Make dressing:
Whisk vinegar, oil water sugar substitute, salt, and pepper.Toss veggies with dressing until well coated.
Chill for at least 30 minutes before serving to blend flavors.
