I know I’m about to open a can of worms here but…this is how I make my potato salad!
4 large potatoes peeled and cubed down to 1″ pieces.
3 eggs hard boiled and peeled, chopped up and placed in the fridge to cool .
1/2 cup blue plate mayonnaise
2 heaping tbs yellow mustard
2 heaping tbs sweet relish
1 small rib of celery finely chopped
1 tsp each Cajun seasoning, garlic powder, onion powder
Paprika for garnish
Boiled my potatoes till they’re fork tender and dropped in a large mixing bowl with ice water to cool. Remove from the ice bath androp in a large micing bowl. Add in the cooled, chopped eggs, then the rest of the ingredients. Mix well and place in the fridge. To further cool and set up. Garnish with a few shakes of paprika. Enjoy!e
