Ingredients:
3–4 medium beetroots
1 tablespoon olive oil
Salt, to taste
Black pepper, to taste
1 teaspoon dried thyme or rosemary (optional)
Instructions:
- Wash and peel the beetroots.
- Slice them into rounds about ½ inch (1 cm) thick.
- Toss with olive oil, salt, pepper, and herbs if using.
- Arrange on a baking tray in a single layer.
- Roast at 200°C (400°F) for 30–40 minutes, turning once halfway through.
- Serve warm as a side dish or add to salads.
Health Note: Beetroot is rich in fiber, folate, and antioxidants and may support heart health and blood pressure control. However, claims that it “restores vision” or “cleans fat from the colon and liver” are exaggerated and not supported by strong scientific evidence. It is a healthy vegetable, but not a cure for eye, liver, or colon diseases.
