This “one-pan” style comfort dish combines crispy seasoned potatoes with juicy chicken bites, all smothered in a rich garlic butter sauce and melted cheddar.
1. Ingredients
- Protein: 500g Chicken breast or thighs (cut into bite-sized cubes).
- Vegetables: 5-6 medium gold potatoes (cubed) and 1 medium white onion (finely chopped).
- Dairy: 1/2 cup butter (cubed), 1/2 cup shredded Cheddar cheese, and 2 tbsp mayonnaise or sour cream (for creaminess).
- Seasoning & Herbs: Fresh parsley (chopped), 4 cloves of minced garlic, salt, black pepper, and paprika.
2. Cooking Instructions
Step 1: Prep and Roast the Potatoes
- Preheat your oven to 200°C (400°F).
- Toss the cubed potatoes with olive oil, salt, pepper, and a bit of paprika.
- Place them in a baking dish and roast for 20-25 minutes until they start to soften and turn golden.
Step 2: Season the Chicken
- While the potatoes are roasting, season your chicken cubes with salt, pepper, and a small amount of the minced garlic.
- Optional: Mix in the mayonnaise to keep the chicken extra moist during baking.
Step 3: Combine
- Remove the dish from the oven. Add the chicken pieces and chopped onions into the dish with the potatoes.
- Toss everything together so the flavors distribute evenly.
Step 4: The Garlic Butter Sauce
- In a small bowl, melt the butter and mix it with the remaining minced garlic and some chopped parsley.
- Pour this garlic butter mixture evenly over the chicken and potatoes (as seen in your second photo).
Step 5: Final Bake and Topping
- Return the dish to the oven for another 15-20 minutes until the chicken is fully cooked and the potatoes are crispy.
- Top with the shredded cheddar cheese and bake for a final 2-3 minutes until the cheese is bubbly and melted.
- Garnish with fresh parsley before serving.
