Cheesy Potato Chicken Rolls


​These rolls are a brilliant way to turn simple ingredients like potatoes and chicken into an elegant and delicious meal. They feature a soft potato exterior and a savory, cheesy chicken filling.

For the Potato Dough:



  • 4-5 medium potatoes (boiled and mashed smoothly)

  • 1/4 teaspoon black pepper


For the Filling:



  • 2 cups cooked chicken, finely chopped or shredded

  • 1 cup shredded mozzarella or cheddar cheese

  • 2 tablespoons fresh parsley or cilantro, finely chopped

  • 1/2 teaspoon garlic powder

  • 1 tablespoon mayonnaise or cream cheese (to bind the filling)

​1. Prepare the Potato Dough



  1. ​In a large glass bowl (like the one pictured), combine the smoothly mashed potatoes, eggs, flour, salt, and pepper.

  2. ​Whisk or mix thoroughly until a soft, pliable dough forms. If it is too sticky, add another tablespoon of flour.


​2. Make the Filling



  1. ​In a separate bowl, mix the chopped chicken, shredded cheese, chopped herbs, and garlic powder.

  2. ​Add the mayonnaise or cream cheese and stir until the mixture is well combined and holds together.


​3. Assemble the Rolls



  1. ​Take a portion of the potato dough and flatten it into a small circle or “pancake” on a lightly floured surface (similar to the stacks shown in the top right of the image).

  2. ​Place a generous spoonful of the chicken filling in the center.

  3. ​Carefully roll the potato dough over the filling, pinching the edges to seal it completely, forming a cylinder.


​4. Cook to Golden Perfection



  1. Pan-Frying: Heat a thin layer of oil in a non-stick skillet over medium heat. Place the rolls in the pan and fry, turning occasionally, until all sides are golden brown and crispy.

  2. Baking (Optional for the Look in the Image): For that “broiled” look shown in the bottom photo, brush the rolls with a little melted butter or egg wash. Bake at 400°F (200°C) for 15-20 minutes until the cheese inside is melted and the outside has golden-brown spots.
