Garlic Butter Chicken & Potato Bake

This “one-pan” style comfort dish combines crispy seasoned potatoes with juicy chicken bites, all smothered in a rich garlic butter sauce and melted cheddar.

1. Ingredients

  • Protein: 500g Chicken breast or thighs (cut into bite-sized cubes).
  • Vegetables: 5-6 medium gold potatoes (cubed) and 1 medium white onion (finely chopped).
  • Dairy: 1/2 cup butter (cubed), 1/2 cup shredded Cheddar cheese, and 2 tbsp mayonnaise or sour cream (for creaminess).
  • Seasoning & Herbs: Fresh parsley (chopped), 4 cloves of minced garlic, salt, black pepper, and paprika.

2. Cooking Instructions

Step 1: Prep and Roast the Potatoes

  1. Preheat your oven to 200°C (400°F).
  2. Toss the cubed potatoes with olive oil, salt, pepper, and a bit of paprika.
  3. Place them in a baking dish and roast for 20-25 minutes until they start to soften and turn golden.

Step 2: Season the Chicken

  1. While the potatoes are roasting, season your chicken cubes with salt, pepper, and a small amount of the minced garlic.
  2. Optional: Mix in the mayonnaise to keep the chicken extra moist during baking.

Step 3: Combine

  1. Remove the dish from the oven. Add the chicken pieces and chopped onions into the dish with the potatoes.
  2. Toss everything together so the flavors distribute evenly.

Step 4: The Garlic Butter Sauce

  1. In a small bowl, melt the butter and mix it with the remaining minced garlic and some chopped parsley.
  2. Pour this garlic butter mixture evenly over the chicken and potatoes (as seen in your second photo).

Step 5: Final Bake and Topping

  1. Return the dish to the oven for another 15-20 minutes until the chicken is fully cooked and the potatoes are crispy.
  2. Top with the shredded cheddar cheese and bake for a final 2-3 minutes until the cheese is bubbly and melted.
  3. Garnish with fresh parsley before serving.
