Ingredients
- Yogurt: 2 cups Greek yogurt (full-fat or 2% works best for creaminess).
- Cucumber: 1 large English cucumber (partially peeled and grated).
- Garlic: 2–3 cloves garlic, finely minced or pressed.
- Herbs: 2 tbsp fresh dill, finely chopped (you can also add a little fresh mint).
- Acidity: 1 tbsp lemon juice (freshly squeezed) or red wine vinegar.
- Oil: 2 tbsp extra virgin olive oil (plus more for drizzling).
- Seasoning: Salt and black pepper to taste.
Instructions
- Prep the Cucumber: Grate the cucumber using a box grater. This is the most important step: place the grated cucumber in a clean kitchen towel or cheesecloth and squeeze out as much water as possible. If you skip this, your Tzatziki will be watery.
- Mix the Base: In a medium bowl, whisk together the Greek yogurt, minced garlic, lemon juice, and olive oil until smooth.
- Combine: Fold in the squeezed cucumber and the chopped fresh dill.
- Season: Season with salt and a pinch of black pepper. Stir well to combine.
- Rest: For the best flavor, cover and refrigerate for at least 30 minutes before serving. This allows the garlic and herbs to infuse into the yogurt.
- Serve: Transfer to a serving bowl, drizzle with a little more extra virgin olive oil, and garnish with an extra sprig of dill or a few cucumber slices.
