2 Large eggs (Fresh is best for that bright yellow yolk)
2 Breakfast sausages (Beef or chicken)
1/2 cup Baked beans (canned or homemade)
2 slices of Sourdough or Rustic bread
1 tbsp Butter
Salt & Black pepper to taste
Optional: A cup of black coffee or English tea
Instructions:
The Sausages: Start by heating a pan over medium heat with a tiny bit of oil. Fry the sausages for 8-10 minutes, turning regularly until they are golden brown and cooked through.
The Beans: While the sausages are cooking, place the baked beans in a small saucepan. Heat gently over low heat, stirring occasionally.
The Toast: Toast your bread slices until golden. Spread a generous layer of butter while they are still warm.
The Eggs: In a non-stick skillet, melt a small knob of butter over medium-low heat. Crack the eggs carefully. Cook for 2-3 minutes until the whites are set but the yolks are still runny. Season with salt and freshly cracked black pepper.
Assembly: Plate the eggs, sausages, and beans side-by-side. Serve immediately with the toast and your favorite hot drink.
