Lazy Chicken Parmesan Grilled Cheese
Ingredients
- 4 slices Italian bread (thick-cut works best)
- 2 tablespoons Garlic butter (or more, to taste)
- 1 cup Marinara sauce (warmed)
- 1 cup Shredded Mozzarella cheese (or Provolone)
- 1/4 cup Grated Parmesan cheese
- 2-4 Fully cooked chicken tenders (breaded or grilled, sliced)
- Fresh parsley (finely chopped for garnish)
Instructions
- Prepare the Bread: Spread a generous layer of garlic butter on one side of each slice of Italian bread.
- Assemble the Sandwich:
- Place two slices of bread, buttered-side down, in a cold skillet or griddle.
- On the unbuttered side, add a layer of mozzarella cheese and a sprinkle of Parmesan.
- Place the sliced chicken tenders on top of the cheese.
- Spoon a few tablespoons of marinara sauce over the chicken.
- Add another layer of mozzarella cheese (this helps the top slice of bread stick).
- Top with the remaining bread slices, buttered-side facing up.
- Grill: Turn the heat to medium. Cook the sandwiches for about 3–4 minutes on the first side until the bread is golden brown and crispy.
- Flip: Carefully flip the sandwiches and grill the other side for another 3 minutes, or until the cheese is completely melted and gooey.
- Finish: Garnish with fresh chopped parsley.
- Serve: Serve warm with the remaining marinara sauce on the side for dipping.
