​Fresh Breakfast Power Bowl

​This vibrant bowl is naturally low-carb and full of healthy fats and vitamins. It serves one and takes less than 10 minutes to assemble.

​Ingredients

  • 2 Large Eggs: Soft or medium-boiled.
  • 1/2 Avocado: Ripe and thinly sliced.
  • 1 Roma Tomato: Sliced into wedges.
  • 1/2 Cucumber: Sliced into rounds.
  • Cheese Slices: About 3–4 slices of a firm white cheese (like Halloumi, Feta, or a mild white cheddar).
  • Green Olives: A handful, pitted or whole.
  • Seasoning: Black pepper and poppy seeds (or “Everything Bagel” seasoning).
  • Optional: A drizzle of extra virgin olive oil or a squeeze of lemon juice.

​Instructions

  1. Boil the Eggs: Bring a small pot of water to a boil. Gently lower the eggs in and simmer for 6 to 7 minutes for a jammy yolk (as seen in the photo). Immediately transfer them to an ice bath, then peel and halve them.
  2. Prep the Veggies: Slice the tomatoes into wedges, the cucumber into rounds, and the avocado into thin fans.
  3. Arrange the Bowl: Place the cucumber slices and olives on one side. Lay the avocado slices in the center and the tomato wedges on the opposite side.
  4. Add Protein: Tuck the cheese slices at the top and place the halved eggs at the bottom.
  5. Garnish: Generously sprinkle the eggs and avocado with freshly cracked black pepper and poppy seeds.
  6. Serve: For extra flavor, drizzle a little olive oil over the tomatoes and avocado before eating.

​To get those clean avocado slices, use a sharp knife to slice the fruit while it is still in the skin, then scoop the entire “fan” out with a large spoon.
