- 2 ripe Avocados, sliced or cubed
- 2 cups Cherry Tomatoes, halved (or large tomatoes sliced into wedges)
- 1/2 Red Onion, thinly sliced into half-moons
- 2 tbsp Fresh Cilantro (or Parsley), finely chopped
- 1 tbsp Fresh Lime Juice (or Lemon juice)
- 2 tbsp Extra Virgin Olive Oil
- Salt and Black Pepper to taste
- Optional: A pinch of dried oregano or red chili flakes for extra zing
Instructions
- Prep the Vegetables: In a large mixing bowl, combine the sliced avocados, tomatoes, and red onions.
- Make the Dressing: In a small jar or bowl, whisk together the olive oil, lime juice, salt, and pepper until well combined.
- Combine: Drizzle the dressing over the vegetables. Add the chopped cilantro.
- Toss: Gently toss the salad with a large spoon, being careful not to mash the avocado slices.
- Serve: This salad is best served immediately to keep the avocado bright and fresh.
