Ingredients
For the Bites:
- 500g (1.1 lbs) Chicken breast or firm white fish, cut into 1-inch cubes

- ½ teaspoon Garlic powder
- ½ teaspoon Onion powder

For the Coating (Dredge):
- ½ cup All-purpose flour
- 2 large Eggs, beaten
- 1 tablespoon Sriracha or hot sauce (optional, mixed into the eggs)
For the Creamy Dip (The white sauce in the photo):
- ½ cup Greek yogurt or Sour cream
- 1 tablespoon Mayonnaise
- 1 tablespoon Fresh lime juice
- 1 tablespoon Chopped cilantro
- 1 clove Garlic, minced
Instructions
1. Prepare the Coating Station:
- Set up three bowls.
- Bowl 1: Flour mixed with a pinch of salt and pepper.
- Bowl 2: Beaten eggs (add the hot sauce here if you want extra heat).
- Bowl 3: Panko breadcrumbs mixed with chili flakes, paprika, garlic powder, onion powder, and lime zest.
2. Coat the Bites:
- Pat the chicken (or fish) dry with paper towels.
- Toss the pieces in the flour (shake off excess).
- Dip them into the egg wash.
- Press them firmly into the spiced breadcrumbs until fully coated.
3. Cook (Choose your method):
- Air Fryer (Recommended for the photo look): Lightly spray the bites with oil. Cook at 200°C (400°F) for 10–12 minutes, shaking the basket halfway through until golden and crispy.
- Oven Bake: Place on a parchment-lined tray. Spray with oil. Bake at 200°C (400°F) for 15–18 minutes.
- Pan Fry: Heat 2 cm of oil in a skillet over medium-high heat. Fry for 3–4 minutes per side until deeply golden.
4. Make the Dip:
- Whisk all the dip ingredients together in a small bowl. Chill until ready to serve.
5. Serve:
- Pile the crispy bites on a board lined with parchment paper.
- Garnish with fresh cilantro and extra lime wedges. Serve the dipping sauce on the side.
Pro Tips
- The Color: To get that bright red/orange color seen in the picture, use a high-quality Smoked Paprika. It adds color without making it overly spicy.
