Lazy Chicken Parmesan Grilled Cheese

Ingredients

  • 4 slices Italian bread (thick-cut works best)
  • 2 tablespoons Garlic butter (or more, to taste)
  • 1 cup Marinara sauce (warmed)
  • 1 cup Shredded Mozzarella cheese (or Provolone)
  • 1/4 cup Grated Parmesan cheese
  • 2-4 Fully cooked chicken tenders (breaded or grilled, sliced)
  • Fresh parsley (finely chopped for garnish)

Instructions

  1. Prepare the Bread: Spread a generous layer of garlic butter on one side of each slice of Italian bread.
  2. Assemble the Sandwich:
    • ​Place two slices of bread, buttered-side down, in a cold skillet or griddle.
    • ​On the unbuttered side, add a layer of mozzarella cheese and a sprinkle of Parmesan.
    • ​Place the sliced chicken tenders on top of the cheese.
    • ​Spoon a few tablespoons of marinara sauce over the chicken.
    • ​Add another layer of mozzarella cheese (this helps the top slice of bread stick).
    • ​Top with the remaining bread slices, buttered-side facing up.
  3. Grill: Turn the heat to medium. Cook the sandwiches for about 3–4 minutes on the first side until the bread is golden brown and crispy.
  4. Flip: Carefully flip the sandwiches and grill the other side for another 3 minutes, or until the cheese is completely melted and gooey.
  5. Finish: Garnish with fresh chopped parsley.
  6. Serve: Serve warm with the remaining marinara sauce on the side for dipping.
