Skillet Ground Beef with Rainbow Vegetables

Ingredients:

Protein:

500g lean ground beef (extra lean is best for slimming).

Vegetables:

2 medium zucchinis (chopped into cubes).

Bell peppers (red, yellow, and orange) chopped into chunks.

1 large red onion (diced).

A handful of cherry tomatoes (halved).

Aromatics & Healthy Fats:

2 cloves of garlic (minced).

1 tbsp extra virgin olive oil.Fresh parsley (chopped for garnish).

Seasoning:

Salt, black pepper, paprika, and a pinch of cumin.

Instructions:

Brown the Beef:

In a large skillet or pan over medium-high heat, add the olive oil and ground beef.

Cook until browned and fully cooked through. Drain any excess fat if necessary.

Sauté Aromatics:

Add the diced onion and minced garlic to the pan. Stir for 2–3 minutes until the onion becomes translucent and fragrant.

Add Vegetables: Toss in the zucchini and colorful bell peppers. Sauté for about 5–7 minutes. You want the vegetables to be tender but still have a slight “crunch” to preserve nutrients.

Season & Finish: Add the cherry tomatoes and all the spices (salt, pepper, paprika, cumin). Stir for another 2 minutes until the tomatoes just begin to soften.
