Mom’s Swedish Apple Cake 🍎

Ingredients

½ cup butter (room temperature)

1 ⅔ cups sugar

2 large eggs

1 ½ teaspoons vanilla extract

1 ½ cups all-purpose flour

1 teaspoon baking soda

1 teaspoon salt

1 ½ teaspoons cinnamonThe “Star”:

3 to 4 medium apples (peeled, cored, and sliced or chopped)InstructionsPrep: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round springform pan or a square baking dish.

Cream Butter & Sugar:

In a large bowl, cream together the softened butter and sugar until light and fluffy.Add Wet

Ingredients:

Beat in the eggs one at a time, then stir in the vanilla extract.Dry Ingredients: Sift together the flour, baking soda, salt, and cinnamon.

Gradually add the dry mixture to the butter mixture and mix until just combined (don’t overmix!).

Add Apples: Fold in the apple pieces. The batter will be quite thick, which is normal for this type of cake.

Bake: Spread the batter into the prepared pan. If you like, you can sprinkle a little extra cinnamon-sugar on top before putting it in the oven. Bake for 40–50 minutes, or until a toothpick comes out clean.

Serve:

This is delicious warm, and in true Swedish fashion, it’s often served with a side of vanilla sauce (vaniljsås), whipped cream, or a scoop of vanilla ice cream.
