Mediterranean Ground Beef Stir Fry

– 1 lb ground beef
– 1 tbsp olive oil
– 1 small onion, diced
– 3 cloves garlic, minced
– 1 bell pepper, chopped
– 1 zucchini, diced
– 1 cup cherry tomatoes, halved
– Β½ cup Kalamata olives, sliced
– 1 tsp oregano
– Β½ tsp cumin
– Β½ tsp paprika
– Salt & pepper to taste
– ΒΌ cup feta cheese, crumbled
– Fresh parsley, for garnish

1. Heat olive oil in a large pan over medium heat. SautΓ© onion and garlic until fragrant.
2. Add ground beef and cook until browned, breaking it apart as it cooks.
3. Stir in bell pepper, zucchini, and cherry tomatoes; cook until softened.
4. Season with oregano, cumin, paprika, salt, and pepper. Mix well.
5. Toss in olives and cook for another 2 minutes.
6. Remove from heat, sprinkle with feta cheese, and garnish with parsley.
7. Serve as is or with rice, quinoa, or pita bread.
